Remove Silver Fern Farms Beef Mince with Brisket from the fridge and packaging and allow to bloom at room temperature for 10 mins.
Heat 1 Tbsp oil in a large cast iron skillet over med-high. Add beef and cook, breaking up with a spatula until beginning to turn brown, about 2 mins. Sprinkle on the taco seasoning and continue to cook until fully cooked, another 2 mins.
To make the dressing, mix chipotle, mayonnaise, yoghurt and 1 Tbsp lime juice. Season with salt.
Season red cabbage with remaining vegetable oil, lime and salt.
To assemble, arrange all veggies, seasoned beef, coriander and tortilla strips on the shredded lettuce in bowls. Drizzle chipotle dressing over or serve on the side.
