Ingredients

  • 1 pack Silver Fern Farms Beef Flat-Iron Steaks
  • 1 bunch asparagus
  • 100g mayonnaise
  • 100g rocket, roughly chopped
  • 25g almonds, sliced
  • Handful rosemary
  • 1 Lemon

Method

Remove Silver Fern Farms Beef Flat-Iron Steaks from the fridge and packaging and allow to bloom at room temperature for 10 mins.

Coat beef with oil and season with salt and pepper.

Remove woody ends of asparagus, season with salt and pepper and drizzle with olive oil. mix rocket with mayonnaise and season. 

On the flat plate, toast off almonds, season with salt and set aside.

Char asparagus on the grill until semi soft, brushing with rosemary and olive oil. Toast rosemary sticks on the grill. 

Meanwhile, cook beef on the flat plate or grill for 3-4 mins each side for med-rare, remove from heat, cover loosely, and rest for 5 mins before carving across the grain.

Place asparagus on a plate with sliced beef, drizzle with rocket mayo, almonds, and torn pieces of toasted rosemary. Finish with a squeeze of lemon juice and season.
