Ingredients

Venison

  • 1 pack Silver Fern Farms Venison Steaks
  • 2 Tbsp oil
  • 1 Tbsp mustard
  • Salt and pepper to season

Herb Crust

  • 1 Tbsp each of fresh herbs; parsley, tarragon, marjoram, thyme
  • 1 clove garlic, crushed
  • ½ cup breadcrumbs
  • 1 egg

Method

Place the fresh herbs, garlic, and breadcrumbs in a food processor. Pulse to combine. Add egg and process further. A little water can be added if it is too dry.

Sear your venison in a hot pan until browned on all sides. Dab with a paper towel to remove any oil residue.

Preheat an oven to 220°C. Spread a little mustard over each steak and pack the herb crust on top. Cook the steaks in the oven for 10 minutes (medium-rare).

Remove from the oven, cover with tinfoil, and rest your venison for 5 minutes. Slice across the grain and serve with a selection of sautéed seasonal vegetables.
