Orange and Ginger Lamb Stir-fry

Ingredients

  • 1 pack of Silver Fern Farms Lamb Stir-Fry
  • 2 tsp grated fresh ginger (or ½  ground ginger)
  • 1 clove garlic, crushed
  • Zest and juice of 1 orange
  • 1 Tbsp cooking oil
  • 1 pack fresh stir-fry vegetables
  • 2 tsp cornflour
  • 1 Tbsp dark soy sauce

Method

Combine the ginger, garlic, and orange zest then toss together with the lamb. Heat the oil in a large frying pan or wok. Stir-fry the lamb for 2 minutes. Add the stir-fry vegetables – or a mixture of any vegetables that you have handy – and stir-fry for another 2 minutes.

Mix cornflour with soy sauce until smooth. Stir the juice of the orange (around 5 tablespoons) into the cornflour mixture. Pour over the lamb and vegetables and cook for a few seconds until the sauce is thickened and glossy.

Serve with hot noodles or rice.
