Ingredients

  • 1½ cups cold cooked basmati rice
  • 1 large mango cut into 2cm dice
  • 1 red pepper, deseeded and sliced thinly
  • ½ cup chopped fresh coriander 
  • ½ cup chopped fresh mint
  • 2 spring onions, thinly sliced
  • 1 fresh large chilli, deseeded and finely chopped
  • ¼ cup toasted sesame seeds 
  • Optional – ½ cup chopped salted peanuts

Dressing:

  • Zest and juice of a lemon 
  • 3 Tbsp rice bran oil

Method

Combine all salad ingredients into a bowl.

For the dressing, combine the dressing ingredients together in a jar and shake well. Add dressing to the salad and toss well.
