Ingredients

  • 2 cups cabbage, finely sliced 
  • 1 cup bean sprouts
  • ½ telegraph cucumber, deseeded and diced 
  • ½ finely chopped green pepper
  • 2 spring onions, finely sliced
  • 1 kiwifruit, peeled and diced 
  • ¼ cup each finely chopped fresh herbs – mint, coriander, parsley
  • 1 cup of fine crispy noodles

Dressing

  • 2 Tbsp olive oil
  • 1 Tbsp sesame oil
  • 1 Tbsp soy sauce
  • 1 Tbsp brown sugar
  • Juice of 2 limes or lemons
  • 1 Tbsp grated fresh ginger
  • 1 clove garlic – crushed
  • 1 chilli – seeded and chopped

Method

Combine all salad ingredients into a bowl.

For the dressing, combine the dressing ingredients together in a jar and shake well.

Add dressing and toss well.
