Binden Topsides/Silversides

Binden topside is derived from the inside cap off, side muscle off and the binden silverside is derived from the outside  is removed from carcases over 75kg. The cuts are squared and removed of all silverskin. Individually vacuum packed.

Boneless Whole Leg - Open Boned

This cut is derived from a chump on bone-in leg, the aitch and shank bones are removed leaving the shank meat intact. The femur bone is removed by open boning from the leg, leaving the complete leg intact. Trimmed of all glands and associated fat.
