Ingredients

  • 1 Silver Fern Farms Lamb Leg Roast
  • 1 Tbsp oil
  • 1 Tbsp smoked garlic salt
  • 1 onion (diced)
  • Large handful of fresh mint, extra to serve
  • 1 cup red wine
  • 1 cup orange juice
  • 1 Tbsp brown sugar
  • 2 garlic bulbs
  • Brussels sprouts, steamed, to serve

Method

Preheat oven to 200°C. Rub oil and smoked garlic salt into lamb and place in a roasting dish. Mix onion, mint, red wine, orange juice and sugar together. Add mixture and garlic bulbs to roasting dish.

Cover and cook for 30-40 minutes. In the last 15 minutes remove lid to caramelise the skin. Rest for 5 minutes.

To make gravy, place juices from roasting dish in a saucepan and reduce.

Squeeze garlic out from the bulbs and add to the gravy.

Slice lamb across the grain and serve with steamed brussels sprouts, fresh mint leaves.
