Rosemary Lamb Loin Fillets with Horseradish Creme

Ingredients

  • 1 pack of Silver Fern Farms Lamb Loin Fillets
  • 2 Tbsp olive oil
  • 4 Tbsp chopped fresh rosemary

Horseradish Creme

  • 150 g low fat thick yoghurt
  • 1 Tbsp prepared horseradish
  • 1 tsp Dijon mustard
  • 1 Tbsp parsley, chopped

Method

Rub the lamb loin fillets with chopped rosemary, oil and season to taste. Heat a frying pan to medium-high. Pan fry the lamb for 3-4 minutes each side (medium-rare to medium). Remove from the pan and rest for 5 minutes.

To make the horseradish crème, whisk the ingredients together to combine.

Slice the lamb across the grain and top with a spoonful of the horseradish crème.

Serve with mash and a fresh rock salad or steamed vegetables.
