Beef Flat Iron Steaks with Middle Eastern Rub

  • 1 pack Silver Fern Farms Beef Flat-Iron Steaks
  • ½ tsp each: caraway seeds, cardamom seeds, black peppercorns and turmeric
  • 2 Tbsp olive oil

Feta and Tomato Bake

  • 200 g feta 
  • 1 lemon, zest and juice 
  • ¼ tsp chilli flakes 
  • 2 stalks fresh marjoram or oregano
  • 300 g small vine-ripened tomatoes
  • 2 Tbsp olive oil


Preheat the oven to 200°C. Break the feta up into 10 large pieces and place in the bottom of a baking dish. Sprinkle over lemon zest and juice and chilli flakes. Sit marjoram and tomatoes (still on the vine) on top and drizzle oil over. Bake for 15 minutes, until the tomatoes are starting to split.

To make the spice mix, grind the spices together in a mortar and pestle or spice grinder. Rub the spice mix over the steaks and coat with oil. Season to taste.

Preheat a frypan or barbecue and cook the steaks for 3 minutes each side. Transfer to a plate, cover, and rest for 5 minutes.
