Warm Haloumi and Grape Salad

Ingredients

  • 150g haloumi, sliced
  • 1 cup green grapes, sliced in half
  • 2 cups baby spinach leaves
  • 100g snow pea sprouts
  • ½ cup micro cress or nasturtium leaves
  • Juice of 1 lemon

Method

Heat a medium non-stick frying pan over a low heat. Fry haloumi slices in batches for 2 minutes each side or until browned. Set aside on paper towel and keep warm. In the same pan, heat grapes for 5 minutes, or until skins just begin to break.

Arrange halloumi on a platter and top with warmed grapes and salad leaves. Garnish with snow pea sprouts, micro cress and nasturtium leaves. Drizzle with fresh lemon juice.
