Ingredients

  • 400g gourmet baby new potatoes
  • 2 green apples, julienned
  • 4 tbsp lemon juice
  • ¼ cup chopped fresh herbs, like mint, parsley
  • ½ cup sour cream
  • 2 tbsp cream or milk
  • ½ tsp French mustard
  • 1 red onion, thinly sliced
  • 2 stalks celery, thinly sliced
  • 6-8 dill pickles, julienned
  • 2 green chillies, finely sliced
  • Flat-leaf parsley leaves, to garnish

Method

Cook the potatoes in boiling water for 12 minutes or until just tender. Drain and allow to cool.

Toss apple slices in 2 tablespoons of the lemon juice.

Mix herbs, sour cream, cream or milk, mustard and remaining lemon juice. Gently toss the potatoes, onion, celery and dill pickles with the sour cream mixture. Garnish with chillies and parsley.
