Ingredients

  • 400g baby new potatoes
  • 2 Lebanese cucumbers, sliced
  • 2 spring onions, sliced
  • 1 cup kalamata olives
  • 1 cup cherry tomatoes, halved
  • ¼ cup mint leaves

Lemon and Chive Dressing:

  • ¼ cup lemon juice
  • 2 tbsp chopped chives
  • ¼ cup extra virgin olive oil
  • 2 tbsp apple cider vinegar

Method

Cook potatoes in boiling water for 12 minutes or until tender.

To make lemon and chive dressing, shake all ingredients together in a glass jar.

Toss remaining ingredients in a large bowl. Season with sea salt flakes and freshly ground black pepper. Drizzle with dressing to serve.
