Ingredients

  • 3-4 sprigs fresh dill or fennel
  • 1 florence fennel bulb
  • 2 tbsp cider vinegar
  • 1 tsp salt
  • 1 tsp golden caster sugar
  • 2 green apples, sliced thinly
  • 2 tbsp lemon juice
  • Bunch baby mint leaves
  • Lime wedges, to garnish

Method

Pick small sprigs of dill or fennel and refresh in a little cold water Set aside. Remove the tough outer layer of fennel bulb, slicing the remaining bulb very thinly.

In a small saucepan over a low heat, combine vinegar, salt and sugar. Stir until dissolved. Allow to cool. In a large bowl, toss sliced fennel bulb with vinegar mixture. Allow to rest for 5 minutes. Add apple, lemon juice and mint and toss. Drain dill or fennel fronds. Garnish salad with fronds and lime wedges. Serve immediately.
