Embracing the flavours of the world and making all dishes from scratch using fresh, local produce helps ensure Plume’s Head Chef Atesh Ram delivers on his philosophy of ‘Every bite should be a delight’. He thrives on the challenge to prepare the Reserve beef eye fillet as per each guest’s requirements.

Silver Fern Farms Reserve beef has been hand-picked from the farm and the animals have no stress levels, resulting in tender and juicy meat.

Atesh was raised in the tropics and his ancestors shared Indian and Asian style cuisine. This, combined with his training by European chefs, has influenced him to combine Asian, Indian and Pacific Rim flavours. With over 15 years of culinary experience in 5-star hotel kitchens, tropical resorts and a boutique hotel, he is now Head Chef at Plume Restaurant.

Experimenting with new flavours and using old school recipes with a modern twist has helped him win 12 New Zealand culinary medals, including Winner of Beef Dish and Winner of Mystery Box at the Open NZ Culinary Fare in 2014, and a silver medal in the Wine and Food Match 2009.
